[Workbench] No user profile should be required in the default configuration

Description
The default Workbench configuration requires people to enter their organization. This is surprising on new installations, which are usually specific to a single organization. It makes users wonder why the information is being collected.
No profile should be required in application.default.yml. If we want to include an example to show people how to do that, it should be in a comment.
